King Cauliflower
According to the National Restaurant Association’s “what’s hot” predictions for 2018, substituting veggies for carbs is going to be huge.
Replacing pasta and bread with smashed and pureed vegetables hardly seems possible, but it is.
And it would also seem that the veggie set to displace our beloved carbs is…..
Cauliflower.
Instead of including rice on the menu, how about some “riced” cauliflower?
Sure, it still tastes like cauliflower, but with a little chicken stock and herbs, your brain can actually fool you into thinking you aren’t eating cauliflower. Sort of.
People are also mashing and whipping cauliflower as a substitute for mashed potatoes. While it still tastes like cauliflower, remarkably, it has the consistency of mashed potatoes.
