Counting sheep, cows jumping over the moon, and pigs in a blanket…one of these belongs On Your Table. I’ll give you a hint: #nationalpigsinablanketday which is celebrated on April 24.
For a strong-blooded German girl like me, Pigs in a Blanket is hands down, rice and meat packed into a ball, wrapped in cabbage, and basking in a flavorful tomato sauce. At one point growing up, after church on Sundays, it was sausage wrapped in a pancake smothered with warm maple syrup. It wasn’t until I was an adult that I had to endure it being known as hot dogs wrapped in a croissant. I’m not going to argue with the concept, but it is what it is. Some go so far as including corndogs in the mix!
We can thank Betty Crocker for the original American concoction back in 1957. It was a recipe geared towards kids to get them involved in cooking something easy and fun. Which is true considering the German way is A LOT more work!
In our house, we generally do a mix of them all. You could literally have pigs in a blanket for breakfast, lunch, snack, and supper!
No matter which you chose, they all include pork of some sort. Pork is a great way to get minerals and protein into your diet. A healthier option might be ham chunks and bacon bits in an omelet. That’s a new one! Pigs are amazing animals that provide so much more than food for us. Insulin, heart valves, and other pharmaceutical products all come from pigs and keep humans healthy in addition to their meat.
So go out and have whatever you consider to be your favorite pigs in a blanket recipe and celebrate!!
