8 minutes to delicious

Are you constantly racking your brain for a new, easy, crowd pleasing potluck recipes? Have you ever been invited to a gathering and needed a dish to bring on very short notice, but it’s the end of the month and you have a week left until you go to the grocery store so you are scrambling? Do you spend hours surfing Pinterest seeking out that easy dessert that tastes like you spent hours making it? Are you someone who enjoys showing your support for loved ones through food? Maybe it’s just a hot sultry day outside and you don’t want to start your oven to bake anything, but you could really go for a refreshing dessert. Do you have young children or grandchildren that like to be involved in the kitchen so you look for recipes that they will enjoy and are easy enough to allow them to help from start to finish? I have the perfect recipe for you!

This 8-minute strawberry fluff pie is one that has been in my husband’s family for years. I vividly remember going to his grandmas for Thanksgiving and her serving this pie. It wasn’t fancy looking, but it was mouthwatering, delicious, palate cleansing and light.

To top it off I found out how incredibly easy it was to make, and it is something you can make ahead of time (just make it and put it in the freezer)!! So, guess what my new go-to is for holidays and potlucks? You guessed it: 8-minute strawberry fluff pie! If you can boil water &and mix ingredients, you can make this pie from start to finish in 8 minutes. That’s a huge WIN-WIN for this mom!!!

8 Minute Strawberry Fluff Pie

Ingredients

1pkg (3oz) Strawberry or Raspberry Jell-O*

2/3 cup boiling water

1pkg. (10oz.) Frozen strawberries

1 8oz. Container Cool Whip

9” Graham pie crust**

Instructions

Dissolve Jell-O in water. Stir and add strawberries. Chill strawberry mixture in fridge until it thickens. Fold cool whip into thickened strawberry mixture & spoon pie filling into the crust. Keep refrigerated.

* You can substitute any kind of Jell-o with coordinating fruit of choice

** You can also use the Oreo premade crust in place of the Graham crust if you wish
