For those of you that know me, you probably have heard me talk about my Amma. (Amma is the Icelandic word for Grandma.) My Amma is the best around. She is the best cook, baker, gardener, painter, financial advisor, and so much more, and I can’t forget to mention that she’s the handiest woman around. You should never need to hire someone to fix anything when Amma’s around!
Last week, Amma and my mom came to visit. I got more done in the four days they were here than I have in a long time! They helped me paint my living room, redecorate, clean house, do laundry, clean up my yard, mow the lawn, get my flower beds ready for planting, and washed our cars! Amma and I also butchered one of my roosters since I had a few too many!
While Amma was here, she also treated us with baking lots of homemade bread. It’s one of her specialties! So I decided I would share her famous Honey Oatmeal Bread recipe!
Honey Oatmeal Bread
2 cups boiling water
1/2 cup honey
2 tbsp butter
2 tsp salt
1 cup rolled oats
1 tbsp dry yeast
1/4 cup warm water
2 1/2 cup whole wheat flour
2 1/2 cup white flour
Mix together oats, honey, butter, salt & water. Bring to a boil. Let stand to cool to 100 degrees.
Put oat mixture in mixing bowl. Add yeast and add 2 cups of whole wheat flour and 2 cups of white flour. Add flour as needed to form soft dough. Mix 5 minutes after all flour is mixed in. Dough ball should form on the dough hook. Take out of bowl and knead until smooth. Put into greased bowl and turn it to coat the top. Place in warm spot; cover and let it double in size (about 1.5 hours).
Turn onto floured board and knead for 1-2 minutes. Shape into two loaves and put into well greased loaf pans. Put top down first to coat, and then turn up again. Let it rise until doubled in size.
Bake at 350 for 40-50 minutes.
