April snow and pickle wraps

Mother Nature is at it again. Just when we think we should be getting spring cleanup underway, a foot of snow gets dropped on us. After the Good Friday snowfall, my social media was filled with “It would be pretty if it was December” and similar sentiments.

It is interesting, the duality that a foot of snow in April causes. It kind of marked my whole weekend. We drove down to Sister’s, and we remarked how well the children were getting along: no squabbles, no fights, we don’t have to go through lengthy bedtime rituals, or cut up their food into non-chokable-size pieces anymore. We adults were free to play cards, and chat, without a kid underfoot or asking to join. It was both liberating and a little sad.

The kids are old enough to make the food they want. Everyone, except Hubby, loves a pickle wrap. Most people would call them pinwheels. In our family, they’re pickle wraps. So the night before Easter, the kids made the wraps. 

Sometimes you wish a part of your life would speed up: get through the week, get to the weekend, get to vacation, get to next season, etc. Sometimes you blink, and you’re a decade further along. While it’s exciting, it’s a little like a foot of snow in April: heavy, yet beautiful. 

Pickle Wraps (AKA Pinwheels)

Tortilla shells

Deli ham

Chopped pickles

Cream cheese

Spread softened cream cheese onto tortilla and layer ham and pickles, roll and chill. Chop when ready to serve. 

Some variations: 

Add Shredded cheese -we like cheddar 

Mix a ranch packet or pickle juice into the cream cheese

Sometimes instead of cream cheese we use sour cream and a little onion

Really it’s whatever you want. We even make pickle-less pickle wraps for Hubby who has an aversion to pickles.
