Bacon stir fry

Bacon stir fry

You don't normally think of bacon as something that shows up in stir fry, but why not? According to Pete Hanebutt, who shares his recipe for bacon stir fry with OYT readers this week, this is the best tasting comfort food ever. "But it's not necessarily good for your cholesterol," he laughs. "You'll enjoy this meal, just don't have it the day before your annual physical." Pete says it's important to use low sodium soy sauce because the bacon already provides enough salt.

And besides. BACON!

Bacon Stir Fry

Ingredients

2 pounds of your favorite bacon.

2 big heads of broccoli, 1/2 lb of baby carrots, and a small can water chestnuts or bamboo shoots.

Onion flakes/powder

Garlic powder

Low sodium soy sauce

Terryaki sauce

Instructions

Fry the bacon crispy and remove from the greasy pan. Put all the veggies in the greasy pan and fry to you preferred tenderness. Drain off all the grease. Wait 5 minutes and drain the grease again. Crumble the bacon and add it back to the cooked veggies. Add onion powder and garlic powder Add soy sauce and terryaki, several tablespoons of each to your preferred taste. Cook on high heat for 5 minutes, stirring occasionally. Serve over rice or your choice of noodles
