It's no secret that I am not a great cook or a great baker! I love to make food for other people and it makes Kyle so uncomfortable thinking I'm going to give them something that doesn't taste good. He's mortified when I even suggest making food for anyone.
On Saturday, Kyle gave me the highest tier compliment he's ever given for a dessert — “pretty good!”
I almost fainted. Literally, couldn't believe I had surpassed my last top compliment of, “not too bad.”
Anyway, we had a family reunion, ran out of bars and I pieced 3 recipes together to make a peach crumble bar. I don't like peaches so I can't tell you how they were, but I received my highest accolades from my husband yet.
It was quite the week for food. Because on Tuesday I planned to make chicken Parmesan and didn't get up on time. I was craving it and rather than scrap the idea, I tried an experiment. We have an air fryer, microwave, pizza oven and fridge at the farm for lunch. So usually we make lunch ahead of time at home and reheat it, but also baking a casserole works the best.
I found large popcorn chicken in the freezer, air fried it like usual then chopped it up into bite size pieces. Then I took noodles I had made, tossed them with a can of tomato paste + sauce, seasoned with Italian and basil, mixed in the chicken, covered in shredded Parmesan and baked until it was hot + bubbly.
IT WAS SO GOOD! Plus easy.
