Crockpot Chicken Spaghetti

By Becca Hennessy

As a lover of all things spaghetti, I decided I HAD to try out a cropckpot meal that my Grandma Dottie used to make for us. It's filling, delicious and SUPER easy!

Crockpot Chicken Spaghetti

Cook Time:

Cook time will depend on how you set your crockpot. If set on high, 4-5 hours. If set on low, 7-8 hours.

Ingredients:

2 chicken breasts

2 cans of cream of chicken

1/2 cup diced onion

1 box of spaghetti (cooked and drained)

1 can of Rotel diced tomatoes with diced green chilis

2 cups Fiesta style shredded cheese

1/4 cup of chicken broth

Salt and pepper to taste

Instructions:

  1. Place chicken breasts into crockpot
  2. Salt and pepper chicken to desired amount
  3. Mix chicken broth, cream of chicken, and can of Rotel in separate bowl and add to crockpot
  4. Turn crockpot to LOW for 7-8 hours or on HIGH for 4-5 hours
  5. Take chicken out to shred once cooked (meat has turn white throughout) and then stir shredded chicken with rest of crockpot contents
  6. Cook spaghetti in separate pot, drain
  7. Add drained spaghetti to crockpot mixture
  8. Add 1 cup of shredded cheese to crockpot, stir
  9. Wait until last 30min.- hour of cook time to add second cup of shredded cheese then stir again
  10. ENJOY!

This would be a great meal for fall! It brings back great memories from my childhood, so it's almost like a comfort food for me. I hope you enjoy this recipe as much as I do!
