Last week our oven stopped working. As a result, I ended up trying out a few crockpot recipes. One VERY easy meal was pork loin with veggies.
I'm not one to brag about my cooking, but this crockpot pork loin is a now one of my favorite meals.
Crockpot Pork Loin w/ Veggies
Ingredients
*Amount of veggies to use is based on your preference/how much you can fit in your crockpot*
- 1 Pork loin (2-2.5 lbs)
- 1 bag of carrots (*your preference of how much*)
- Chopped potatoes (*your preference of how much*)
- 1/2 yellow onion- diced
- Pork loin seasoning: 1 Tbsp Lawry's seasoning salt, 1 Tbsp onion powder, 1 Tbsp garlic powder, 1 tsp salt and 1 tsp pepper (*season to your taste*)
- 2 cups of water
Instructions
Season pork loin in a bowl then add to crockpot
Add potatoes, onions, and carrots (can add seasoning to these as well if you want)
Add two cups of water (keep in mind that you can always add a little more throughout the cook time)
Set crockpot for 8-9 hours on LOW
Check every other hour to see how meat and veggies are cooking and if you need to add water. By the 8-hour mark, your pork should fall apart and be very tender.
