Cucumbers have been around for a very long time. According to Wikipedia, they originated in India and have been cultivated for at least 3,000 years.

These fast-growing veggies are actually a fruit, or more specifically, a botanical berry and are part of the Cucurbitaceae gourd family.

A 3.5 ounce serving (just shy of half-a-cup) of cucumber is 95% water, and has less than 8 calories! Eating raw cucumber is said to help curb your appetite, primarily because of the high water content.

With the chances that many of you are experiencing cucumber overload right now, finding creative, quick ways to use them up is a must! NDFB Director of Organizational Development Joey Bailey says this is great when you have cucumbers coming out of your ears! It's quick, delicious and is great for snacking.

Cucumbers and Cream

Ingredients

3-5 large cucumbers, thinly sliced

16 oz. heavy whipping cream

16 oz. water

1/4 cup vinegar

1/3 onion, mindced

1 Tbsp. sugar

1 Tbsp. salt

Instructions

Mix all ingredients in a large container.
