Fall is on the menu

I love making this dish in the fall when the weather starts to cool off, and my family is looking for something hearty, filling, and comforting for supper. Creamy bowtie pasta is tossed with roasted butternut squash, fresh Swiss chard, bacon, and plenty of garlic for a meal that is both hearty and wholesome.  

The butternut squash adds a slight sweetness, while the Swiss chard adds beautiful color from both its leafy greens and colorful stems.  

Aged Gouda, sourced right here in North Dakota from Cows & Co Creamery, gives the creamy sauce a rich depth of flavor and just the right amount of saltiness alongside the bacon. 

Served straight from the skillet, this colorful pasta is the kind of meal I love making during autumn and hope you will also. It’s simple, hearty, and packed with seasonal vegetables and flavor.
