Getting a jump start on Thanksgiving leftovers

I belong to a club…okay maybe not a “club.” I am one of the people who believes leftovers are better than the main event when it comes to Thanksgiving. Yes, I think Thanksgiving is lovely, but I am looking forward to some leftover goodness.

I don’t know if because when it’s leftovers, it’s less shocking if it’s just in a hot glob mountain on your plate? I think glob-mountains are actually the preferred way to eat leftovers.

Leftovers are also a time of transformation. Take potatoes for instance. If you had baked potatoes the first time, you can mash them the second time. If you had mashed the first time, you can have potato pancakes the second time.

What??? You haven’t had potato pancakes?!? They’re simple! Take your mashed potato, maybe 3ish servings worth and drop it in a bowl. Then add an egg and stir the concoction up really well. Add pepper, garlic, onion, whatever rings your bell, and then add flour until you get a consistency somewhere between pancake batter and thick biscuit mix.

Melt some butter in a frying pan on medium heat, and add your potato mixture. Fry until it’s golden, flip it over and do the same, and BAM potato pancake!

Hubby doesn’t love them. Miss A won’t touch them. Miss E says they’re okay with a shrug. I enjoy them as an after-holiday treat. So bust out the sweatpants and do some stretches, it’s time for Thanksgiving – and leftovers!!!
