Woof! When it gets hot, we don’t use our oven much, if at all. We do most of our cooking on the grill, when we aren’t eating from concession stands. We watch A LOT of young kids playing baseball or softball in June.
The grill used to be primarily Hubby’s domain, but now that I have figured out how to turn it on and make it go, I’m doing a little grill dabbling myself.
Miss A’s diet would be entirely hotdogs and strawberry milk if given the chance. Miss E is always down for a good burger.
I am trying to make up for years of neglect and tasty, but poor, choices, so I am trying to trend on the healthier side of things. The problem is, what to do for a side dish??? I want a vegetable with some flavor.
Eureka! My favorite super-simple side dish is grilled peppers. They can be SO basic but delicious. I cut the peppers(sweet, green, red, jalapeño, whatever) lengthwise and smear a little lite laughing cow cheese in them, maybe sprinkle a little Tajin, put the pile in some tinfoil and let them cook. Sometimes I’ll mix hot and sweet peppers together and the sweet will take on some of the heat from the spicy peppers, it just depends on how spicy I’m feeling.
We all like having some options, so just because the oven isn’t coming on, doesn’t mean we can’t enjoy some hot food with lots of flavor! When we make a spicier pepper packet, we’ll make another tinfoil packet with cut up potatoes or broccoli. We call grilled potatoes “Magic Potatoes” because it’s amazing how fast they can disappear!
