New Year's Eve Hors d'Oeuvres for your table

Spicy Sausage-Stuffed Mushrooms

Ingredients:

36 large white button mushrooms

1 lb spicy Italian sausage or sweet (if you prefer)

1 Tbs olive oil

½ cup of grated parmesan

¼ cup Italian-seasoned fine dry bread crumbs

1 slightly beaten egg

Instructions:

  1. Preheat oven to 350 degrees. Rinse and drain mushrooms, remove stems discard. Set mushroom caps aside.
  2. For stuffing, in a large skillet cook sausage in hot olive oil over medium heat until brown. Use wooden spoon to break up sausage as you cook it. Drain off fat. In a bowl stir together ¼ cup of Parmesan cheese, the breadcrumbs and egg. Stir in the sausage.
  3. Use a small spoon to fill the mushrooms caps with the stuffing. Place the stuffed mushrooms caps in a large broil proof baking pan. Bake for 20 minutes until heated through. Remove from the oven, drain off any liquid from the bottom of the baking pan.
  4. Preheat broiler, sprinkle mushrooms with remaining ¼ Parmesan cheese. Broil for 2 -3 minutes or just until cheese melts and browns.

Makes 36 appetizers. You can make up to 3 days in advance. Just cover until ready to serve. Pairs well with Champagne.

 

Easy Bacon-wrapped water chestnuts

Ingredients:

2 cans whole water chestnuts, drained and rinsed

1 package bacon

Barbecue sauce

Instructions:

Preheat the oven to 400 degrees. Rinse and drain the water chestnuts. Wrap each water chestnut in a piece of bacon, secure with a wooden toothpick, and bake in the preheated oven in a baking pan until the bacon is crispy. Pour off excess fat, then pour on barbecue sauce and return to the oven to heat thoroughly.

 

Cheese biscuit bombs

Ingredients:

16 1-inch cubes of your favorite cheese

1 tube of biscuit dough

2 Tbsp. butter, melted

1 tsp. chopped parsley

Kosher salt

Instructions:

Place cheese cubes on a small sheet tray and freeze for 1-2 hours. Preheat oven to 400 degrees. Line a medium baking sheet with parchment paper. Remove the biscuits and use a serrated knife to cut each biscuit in half horizontally, creating two rounds. Place one square of cheese in the center of sliced biscuit and wrap dough to cover cheese. Pinch to seal and place on prepared baking sheet, seam side down. In a small bowl, combine butter with parsley. Brush on bombs. Season with salt. Bake until golden, 10-15 minutes.
