There is an impending Snowmageddon, Icetober, Blizzacopia heading our way the end of this week (or maybe it’ll miss us-who knows). When potential winter weather is coming, I stock up.
What do I stock up on besides vodka? Eggs, milk and bread? Maybe, but mainly I get carrots, celery and potatoes. When it’s blizzarding outside, you can bet your frostbitten fanny that I’m using the crockpot inside.
Chicken, water, chicken bouillon, carrots, celery and onion: leave on low all day and boom chicken soup. After it cooks all day, shred the chicken, boil some noodles or Grandma’s dumplings and you’ve got yourself a crowd-pleaser.
Sometimes if we are smoking or baking a meat, I’ll just do potatoes.
Super Easy Crockpot Potatoes:
Cut up potatoes into small bite-size pieces, leave the skin on, and then mix 1/4 cup extra virgin olive oil, and any seasoning you want. I use oregano, Italian seasoning, Parmesan cheese and mix it all together, pour over the potatoes. Stir it up, cover and leave on high for 4 hours. Do NOT peek. I made this last weekend and Miss E ate two bowls-full.
When Mother Nature is having a massive chaotic fit outside, it’s nice to have some comfort food inside. So cozy up with the crockpot or an adult beverage because it’s time to batten down the hatches and stay warm!!
