Last week was Thanksgiving, and depending on your family situation, you may still be cranking through leftovers. At least we are.
We opted for a traditional Thanksgiving, which involves turkey, and since we subscribe to the “Go Big or Go Home” rule, we still have leftover bird in the refrigerator. Turkey leftovers are good for 3-4 days after the meal, so we are starting to get creative.
Today I made turkey Alfredo with garlic cheddar biscuits. The biscuits were the only thing that resembled actual cooking; the rest was dump or drop: a jar of sauce, a box of noodles, and reheated turkey.
The biscuits are quite easy: 2 cups of self rising flour, some garlic powder and salt (teaspoon-ish) I measure with my heart. Then add 1/4 cup shortening, cupping into the flour with two butter knives, 3/4 cup milk, and a cup of cheese. Mix and put on a greased baking sheet.

Bake at 450 for about 11 minutes and then brush with butter and voila.

So if the all-American meal is getting you down, you can have some Italianish dish in less than half an hour…plus you burn up some of that bird.

So when you have been dreaming about enchiladas all day, but realize you don’t have the ingredients to make enchilada sauce, try turkey penne Alfredo. Also, don’t judge, but I may have sold it to my children as chicken. We all have our own battles to wage on the home front.
