We're celebrating because it's National Waffle Iron Day. I mean, really, who doesn't love waffles? They are the perfect little butter and syrup receptacles. In fact, they are really good when you toast them, put a dollop of butter on them and coat with syrup, then microwave until the butter melts completely. It's almost like the waffle is now infused with all that buttery, maplely, goodness.
According to The National Day Calendar the first patent in the USA for a waffle iron was in 1869, submitted by Cornelius Swarthout. In 1911, General Electric produced a prototype electric waffle iron. The first electric waffle iron was available to the general public in 1918.

Chocolate Waffle Cookies
Ingredients:
1/4 cup cocoa
1 cup butter
4 eggs
1 1/2 cups sugar
2 tsp. vanilla
2 cups flour
Instructions:
Beat butter, sugar and eggs. Add cocoa and vanilla. Beat until smooth. Add flour and beat until smooth.
Drop onto a hot, greased waffle iron (approximately 350 degrees) until done.
