Holy pig snout! We almost missed the fact that today, December 30, is #Nationalbaconday! This delectable chunk of meat is arguably the most versatile answer to all kinds of culinary conundrums. Asparagus too boring? Drizzle with olive oil, wrap it in bacon, throw on some black pepper it and bake for a veggie side dish even your pickiest eater will love! And don't knock it until you've tried it: maple-bacon doughnuts are so good you might need to eat more than one!

Whether it's bacon grilled cheese or good old bacon and eggs, it's safe to say that everything taste better with bacon.

While fried bacon is always a winner, you can bake bacon as well. We got this handy-dandy baked bacon recipe from pork.org:

Preheat oven to 425 degrees.

Line a lipped sheet pan with aluminum foil.

Coat both sides of a cooling rack with light cooking spray and place in the sheet pan

Lay strips oif bacon across the width of the cooling rack

Bake for 20-25 minutes.

Remove from oven and place on a paper towel lined plate and take another paper towel to pat away excess grease.
