Our final dairy Friday

On this final Friday of June Dairy month, we thought a few dairy facts might be in order before we share a yummy recipe.

June Dairy Month has been celebrated since 1937 when it was launched with the theme "Keep Young -- Drink Milk."

In 1987, there were 2,024 dairy producers in North Dakota. Today, that number is only 13, according to Poi.data.io.

In 1986, there was at least one dairy producer in every county but Adams County, according to a Dairy Fact report in the June 1987 edition of Dakota Family, a publication that NDFB proudced back in the '80s and '90s.

The delicious dairy recipe we're featuring this week also comes from Dakota Family, from the June 1988 edition. According to Arlene Peterson, who wrote the Pantry Shelf column and was the NDFB Program Coordinator, this Cream Cheese Dessert is both easy, and delicious, which always sounds like a winner in our book!

The dessert was one of the featured recipes in the Des Lac Cookbook, a project of the Community Club, compiled for the city's 75th Jubilee in 1986. Although we don't have a photo of this delicious dessert to share, it might show up on a July 4th table or two, due to the simple ingredients and downright deliciousness! Cream Cheese Dessert

Ingredients

20 graham crackers, crushed

1 stick butter

1 8-ounce pkg cream cheese

3/4 cup powdered sugar

1 1/2 cup whipping cream

Blueberry or cherry pie filling

Instructions

Mix cracker crumbs and butter. Press into a 9 x 13 pan and bake for 10 minutes, cool. (Editor's note: No temperature was given to bake the crust, but we'll suggest 350 degrees.) 

Mix cream cheese and powdered sugar. Whip cream and add the cheese mixture. Spread half of the mixture over the cooled crust. Top with pie filling and add another layer of the cheese/cream mixture. Chill.
