Since it's National Pumpkin Month, I thought I'd share a family favorite pumpkin recipe. These bars are moist, super easy to make and makes a lot all at once, so it's great for gatherings.
Pumpkin bars
Ingredients:
4 eggs
1 cup oil
2 cups sugar
1 tsp vanilla
2 cups pumpkin (stewed or canned)
2 cups flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
Instructions:
Mix all ingredients. Place into a 11 x 17 jelly roll pan or cookie sheet. Bake at 350 degrees for 20 minutes.
Frosting:
3 oz pk cream cheese at room temperature
1 stick butter
2 cups powdered sugar
1 tsp vanilla or almond flavoring.
Spread on baked bars and sprinkle with pecans.
