Relish the idea?

If you are a relish fan, this is a pretty awesome way to use up a bunch of zucchini. Although zucchini relish is not as crunchy as cucumber relish, mixed with your favorite mustard, it is an excellent condiment on Bratwurst or any other grilling delight. 

Marion Engelsdorfer's Zucchini Relish

Ingredients

10 c ground or chopped zucchini (can sub cucumbers or green tomatoes)

6-8 onions, chopped or ground

4 c chopped green peppers

4 tsp salt

4 c sugar

2 c 5% cider vinegar

2 tsp turmeric (optional)

4 tsp mustard seed

2 tsp celery seed

¼ tsp pepper

Instructions

Stir together zucchini, onions, green peppers and salt. Let stand at room temp 30 min. Drain well. In kettle, combine and bring to boil all remaining ingredients. Stir in vegetable mixture and bring to boil. Ladle into hot jars. Cap and seal. Process in boiling water bath for 10 minutes.
