The Challenge: Week 4

When life gets in the way

The Challenge: Week 4

By Carie Moore

This is real life. You have goals you crush and goals that crush you.

I made my 5K and submitted my time. I may try again even. It was hard, but not too hard. I’m thinking I could maybe beat my time.

Did I stay on track for meals? Nope. Life got in the way. One day I went to Minot and one day I went to Grand Forks, and a couple days I went to the doughnut store and got my maple long john (with nuts), enjoyed it and didn’t feel guilty. That’s because I am happy with who I am. Yes, all of us have that goal weight and that number of pounds we want to lose to be content. I love food more, pure and simple. I know I’ve said it before, but it’s all about balance. Doughnuts, taco pizza, buffets, it’s about moderation and making your life enjoyable but within reason.

I started another 15-day challenge on Sunday. Tuesday morning, I had a doughnut. But it’s ok. I balanced out the rest of my day and still MET my goals for the day. That’s where having a food log app is helpful. Life is not simple or easy, no matter how much we food prep or plan. We can, however, make it manageable and less stressful and give ourselves a better chance at success.

If you’re hovering around your goal weight, embrace where you are. I know at my age, it will get harder. So, for me, it’s about incorporating good habits now and down the road it will be easier if I need to make more changes. Once an illness or disease hits your body you don’t have time to make gradual changes, and big health changes aren’t easy.

Do what you can now, no matter what age you are. Don’t spend time fretting or worry what others might say. Find the food facts for your family and yourself that pertain to you and work with your budget. Down the line, that’s what will matter. Some things are good, but they’re not better. Don’t overspend or overanalyze your food, your workouts, your life. You want them all to be enjoyable, not a struggle.

If you're happy, your family will be happy too.

And if you’re happy, your family will be happy too. Happy wife, happy life! If Momma ain’t happy, nobody is happy! This is me. I eat meat, carbs, fat, protein, veggies, fruit, and dairy. And so does my family.

Here’s a good recipe to try:

Honey Lime Tacos

2-3 corn tortillas

1 large can chicken

Cabbage, thinly sliced ( I put the pre-mix with cabbage and carrots or the broccoli slaw)

Fresh Pico or tomatoes and onions

Guacamole or avocado spread

Honey Lime Dressing:

1 Tbs. mayo

1 Tbs. mustard

1 tsp. honey

1 tsp. lime juice

sprinkle with ginger

Instructions:

Make tacos with thinly sliced cabbage, honey lime dressing, pico, guacamole, and chicken. I mix the dressing with the slaw. You can cook or warm them in a pan heated up with some non-stick cooking spray!
