It’s that time of year. Every gardener in the state of North Dakota is looking to unload some excess zucchini. The running joke is, if you don’t lock your car doors in small towns across the state, you may find your back seat full of this ubiquitous summer squash.
We want to help. What creative way do you use up your zucchini when you aren’t sneaking it into other peoples’ vehicles? In fact, to sweeten the pot a little, let’s make this a recipe contest.
Send On Your Table your unique (no breads, please) recipes that make short work of the zucchini taking up room in your refrigerator! And if there’s a fun back story to your recipe, share that too. The more creative, the better! The top three recipes will receive useful and fun prizes from On Your Table.
Email your recipe, with a picture of the final product (if possible) to: onyourtable@ndfb.org by August 23 by 5 p.m. We know that deadline is coming up very soon, but the sooner we get these recipes out to you all, the quicker the zucchini pile will disappear and people will feel safer again in small communities across the state!
