What do you do with leftover steak?

When you fire up the grill in the cold winter months and want to use the steak you just grilled to perfection for a few extra meals during the week, what do you do?

We make Steak Burritos! Here's what we do:

Get out a big fry pan with a cover. Cut up the steak into bite-size pieces.

Fire up the oven to 450 degrees. Take some of those frozen hash brown patties (3 or 4) and place them in the oven for 15 minutes or so, turning them once to ensure both sides are crispy.

Finely chop some onions. Sauté them in a bit of butter. When they are soft, add a bit more butter on the opposite side of the pan, scramble three or four eggs. Once they are almost done, toss the steak into the onions, add a sprinkle of taco seasoning, cayenne, and pepper, mix, and heat thoroughly.

Finally, take thin strips of cheese and place on the pile of scrambled eggs and, some on the steak mixture. Cover and let cheese melt. If you time it just right, the hashbrowns will be ready when the cheese is melted.

Warm up a couple of burritos and serve!

This is actually a recipe that my husband recreated from one of his favorite West Dakota food truck hangouts, where he would go to check on the progress of a road project. He put A-1 steak sauce on his, which is how they made them on the food truck. Since I'm not a big fan of A-1, I prefer some medium salsa poured over it before I roll up all the goodies in the burrito.

Either way,  it is one of our favorites. We may be a little weird, but we can eat that for three suppers in a row. It's that good.
