You've got this; they're watching

You've got this; they're watching

by Kelli Bowen

For the rush, rush, rush. We are all rush, rush, rushing through the season. Between harvest, fall festivals, sports games, and “the usual,” we are all running like mad.

Last evening, I drove 60 miles to watch Miss A play volleyball for 30 minutes, and then turned around and drove the 70 miles home. She gave me grief that I was 10 minutes late, but that shows she’s paying attention to where and how I show up.

The girls see the hours after dinner on the computer, the early mornings driving hither and thither, and the lines on my face when I fill up the tank with the ridiculously expensive gasoline.

So even though the days are long, the miles are longer, and a gas tank seems shorter than usual, I hope when they look back, they remember that we always got them to where they needed to go, and that we showed up.

I hope they also remember that they were fed. It might be three days of pulled pork in a row, or concession stand pizza, but let’s be honest: they probably prefer that.

While you’re running hither and thither, if you’ve got a meal in the crockpot simmering away, even if you’ll eat off it for three days, and you’re running into the gymnasium 10 minutes late, you’re doing amazing. Don’t let anyone tell you otherwise!

Crockpot Sloppy Joes

Ground beef browned and drained (I sometimes do this the night before and toss it in the fridge for the next day)

Onion powder

Worcestershire sauce

Apple cider vinegar

Brown sugar -just a pinch

Tomato sauce

Ketchup and mustard -measure with your heart

Seasonings: Salt and pepper, chili, and garlic, what you love (I like a good dose of garlic, salt and pepper)

Put it all together and cook on low for 3-4 hours.
