Egg Biscuits

Description

Ingredients

2 cups frozen diced sweet potatoes
1/2 cup onion
2 cups kale
3/4 cup cottage cheese
6 eggs
1 cup flour
1/2 cup shredded cheese (pepper jack is delish)
1/2 tsp salt
1 tsp baking powder
Pepper to taste
 

Instructions

Sauté onion, kale, and sweet potato until tender. Set to the side to cool.

Mix cheese, cottage cheese, eggs and flour together. Add in baking powder and salt. Set aside to rest for 10-15 min.

Add in sautéed vegetables and mix together.

Use a 1/3 cup to place onto a lined cookie sheet. Bake at 375 for 20 minutes.

Note: 2 cups of breakfast meat like bacon or diced ham could be added as well. Sautée the meat with the veggies.
