Too many apples?

Too many apples?

Whether it's pears or apples, chances are if you have either of these trees in North Dakota, you are now swimming in produce. What can you do? Well, you can cut it up, freeze it and save for later, or try a few simple recipes, like this Swedish Apple Pie that was featured in the September 1983 issue of Dakota Family, NDFB's publication at the time.

The recipe is from the Normanna Luterhan Church Cookbook, Dunn Center, N.D., and it is credited to Mrs. Carl E. Boe. According to the article by NDFB Women's Director Arlene Peterson, the cookbook contains 821 recipes and was compiled to help celebrate the church's 75th anniversary. Recipes were shared by members, former members, and former pastors. One section featured German and Norwegian recipes.

Swedish Apple Pie

Preheat oven to 350 degrees

Fill pie plate 3/4 full with sliced apples. Sprinkle 1 tbsp sugar and 1 tsp. cinnamon over the apples

Meanwhile, melt 1 1/2 sticks butter and then add:

1 cup sugar

1 cup flour

1 egg

1/2 cup nuts

Mix well. It will be thick. Pour over apples and bake for 50 to 55 minutes.
