Turn back time
by Kelli Bowen
Fall back is a rough week in our household. Add some cold weather, rain, and wind and it’s the perfect combination for SOUP!
We had some thawed chicken, so I stopped at the store to get some ingredients. I always like white chicken chili but have never made it myself, so I started the chicken in the slow cooker.

When Miss A got home, she said: “chicken soup?!?” There went my white chicken chili plan, so I told her she’d have to cut up the veggies for chicken noodle (which she did) and we started a pot of chicken noodle on the stove. We chopped carrots and celery, added it to some broth with part of the chicken, added some onion and brought it all to a boil for 30 minutes so the veggies were tender, then through noodles in for 8 minutes.

Once Miss A was satisfied, I turned my attention to the white chicken chili in the crockpot. I had looked at a few recipes, and then made a little conglomeration of them that looked like this in a crockpot:
- Shredded chicken
- 1 tsp cumin
- 1/2 tsp Italian seasoning
- ½ tsp chili powder
- ¼ tsp cayenne pepper
- Onion powder
- 1 Tbsp minced garlic
- 2 cans cannellini beans drained and rinsed
- 2 4 oz. Cans diced green chiles drained
- 2 cans chicken broth
My chicken had been cooked ahead of time, so I threw the rest in the pot for about an hour near a simmer. Then, once it was all hot, combined, and happy, I whisked 4 oz. cream cheese cut into cubes and 1/2 cup heavy cream on a low heat and added it to the pot, mixed it well and gave it another 15-20 on low.
I grated some cheese on top and GUYS. Seriously. This was SO good. I will definitely make this again, and maybe play with the broth since Hubby is lactose intolerant, so he scooped his chili with a slotted spoon.

I guess that’s more for me!
So if you’re struggling with the time change, light theft, rainy, cold weather and need a pick me up: make a soup (or two)!
